Raw Broccoli Salad

Ingredients
  • 1 crown of broccoli, cut into bite size pieces + sliced stems
  • ¼ cup plain yogurt
  • 1 TB apple cider vinegar
  • 1 small red onion, thinly sliced*
  • 1 cup shredded carrots
  • ½ cup sunflower seeds
  • ½ cup dried fruit (raisins, apricots, craisins)
  • ½ tsp, kosher salt
  • ¼ tsp. pepper
Instructions
  1. Place all ingredients into a large bowl and stir to combine.
  2. *To remove the strong onion taste, soak the sliced onions in cold water for 10 min. Before adding to the salad mixture
