I took a slight break from writing for the blog, as I am the event director and emcee for our agency‘s breast cancer survivor conference, The Pink Ribbon Talks, each year. The 12th annual event was this past Saturday and I was honored to be in the presence of such amazing people! For more on the event, you can check out the newspaper coverage here:
And what’s a great event with out a crazy picture?!? Here I am with my amazing co-workers. We each had a unique role in making the event a success. It’s amazing to see what happens when you put people with different skills together and throw in a bunch of cancer survivors to the mix. A recipe for a fun and inspiring day, that is for sure!
Speaking of recipes…
I will share with you something today that I’ve never done on my blog before. A Cookie Recipe!
There are a few reasons I haven’t shared a lot of sweets recipes. First, I’m not much of a baker. Second, most people don’t need encouragement to eat sweets and desserts! There is a time and place for desserts and I find that the most nourishing kind is the ones you make at home with your labor of love!
For this occasion, I had an afternoon off and thought it would be fun to make some cookies. They turned out soooo good that I felt like I had to share. I started with this recipe from Allrecipes.com, and ended up making several alterations. Therefore, I knew that it deserved a new name. Thanks to some great ideas from Facebook Friends, here it is:
Nutty Chewy Coco-lass Cookies
- 1¾ cup whole wheat pastry flour (can use all purpose flour)
- 1¾ cup old fashioned rolled oats
- 1 t baking soda
- 1 t baking powder
- 1 t salt
- ¾ cup sugar
- ¼ cup coconut
- ½ cup coconut oil
- ¼ cup ground flaxseeds
- ¼ cup molasses
- 2 eggs, beaten
- 2 t vanilla
- ½ cup chopped walnuts, if desired
- Preheat oven to 350 degrees. Mix flour, oats, baking soda, baking powder and salt together.
- Mix sugar, coconut, coconut oil, ground flaxseeds together in a separate bowl.
- Add molasses, eggs and vanilla to the sugar/coconut mixture.
- Add dry ingredients to wet ingredients, small amounts at a time, until all are mixed together.
- Add walnuts, if desired
- Scoop cookies out with a spoon, place on baking tray and bake for 13-15 minutes
It’s funny, because the few times that I bake, I feel like adding chocolate chips is a must. I add them to almost every recipe, whether it asks for it or not. However, because of the molasses, this one looks chocolaty even without any chocolate in it!
It makes about 36 cookies. Enjoy the yumminess and let me know what you think!
FYI – for those who like to know the nutrient content of things, I entered the recipe into this website to get the following breakdown per cookie (104 calories, 5g fat, 13g carbohydrate, 4g sugar, 2 g protein, 100mg sodium).
PS – Coincidentally, I went to a clothing swap on Friday night and ended up coming home with a Cookie Monster t-shirt. How appropriate!!! 🙂
