Last year I taught a Cancer Fighting Cooking Class – Quick, Easy and Healthy Recipes for Thanksgiving at Financial Pathways of the Piedmont. It was a fun time and I was asked to come back this year. We had a slightly different theme, which I thought was a great idea – recipes to use your holiday leftovers!
Of course, most people can figure out how to make a turkey or ham sandwich, or to simply put some leftovers on a plate and heat it up! However, there are some great, easy ways to use up your leftovers that will turn them into an entire meal.

Tasty Frittata with Leftovers
Use a cup and a half of your leftover veggies to create this flavorful frittata. It’s great for breakfast, lunch or dinner! You can also use any leftover ham or turkey in it.
- 1 1/2 cups of leftover veggies
- 8 eggs
- 3 tblsp. water or milk
- 1 c. grated cheddar or blended cheese – you could even experiment with swiss or other types of cheese
- salt/pepper as desired
- olive oil as desired
- Preheat the oven to 400 degrees
- Beat 8 eggs and water/milk in a large mixing bowl
- Add cheese and seasonings to eggs
- Mix the leftover veggies (you may want to chop them up a bit if they are large pieces) in to the egg/cheese mixture.
- Once mixed evenly, pour into a greased baking dish.
- Put the in the oven for approximately 40 minutes or until the top is golden brown and the eggs are cooked through.
- Remove from oven, let cool for about 5 minutes and enjoy!
The version I made this week used a bunch of minced dill, which was really good! In fact, my husband gave this review:
“That is delicious!!”. 🙂
Other Recipes for Holiday Leftovers!
- Veggie Soup. I shared this recipe in 2008, and it’s a great way to include any of your leftover veggies. Just toss them in!
- Minestrone Soup with Turkey. Use this recipe procedure and add shredded or chopped turkey with step 3).
- 5 Bean Soup with Ham. I would suggest not using the seasoning packet. Just season with salt, pepper and a Mrs. Dash herb mix.
- Turkey Enchiladas. This is one of the best ideas I’ve seen! I prefer shredded chicken or turkey, so you can do that by using two forks and pulling apart the meat. Also, for a meatless version, you can use black beans with butternut squash or leftover sweet potato. - Rice Casserole with Leftover Turkey
- Slow Cooker Ham and Scalloped Potatoes (could use leftover mac and cheese or other pasta in place of potatoes mixed with ham and onion, as the recipe suggests. Baked or in a crockpot would work.)
