I’m taking some time to type up this recipe today because I have literally made energy bites probably 20 times in the last few weeks for groups and classes. They are delicious and so easy because they are NO BAKE. Omega-3 fats, fiber, as well as protein and carbs all combine perfectly to give you an energy boost!
FYI I took two versions (one from Holly Clegg’s Eating Well Through Cancer Cookbook and the other from this website) as inspiration. My recipe is a combination of the two after making them several times.
ALSO, be sure to use this mini scoop to scoop them into ice cube trays (I use these ones with lids!) and then put them in the freezer for 20 minutes. I PROMISE that the scoop and ice cube trays make it so much easier. If in a pinch, you can use your hands to roll them into balls, but I find it to be a big pain. I’d rather leave them in a bowl in the fridge and eat from a spoon than have to try to make little balls out of all of them, ha! They pop right out of the ice cube tray really easily.
Here’s a recipe video I did for Patient Power over on their Facebook page:

PPS – Here’s a tip from one of my groupie’s that I know in real life!
“I buy the unsweetened coconut and toast in the oven on a baking pan for just a few minutes while measuring everything else out. It toasts very quickly and cools down fast too. I like that extra little crunch. Love following your site!”
