Tasty Frittata with Leftovers

Use a cup and a half of your leftover veggies to create this flavorful frittata. It's great for breakfast, lunch or dinner! You can also use any leftover ham or turkey in it.

Ingredients

  • 1 1/2 cups of leftover veggies
  • 8 eggs
  • 3 tblsp. water or milk
  • 1 c. grated cheddar or blended cheese - you could even experiment with swiss or other types of cheese
  • salt/pepper as desired
  • olive oil as desired

Instructions

  • Preheat the oven to 400 degrees
  • Beat 8 eggs and water/milk in a large mixing bowl
  • Add cheese and seasonings to eggs
  • Mix the leftover veggies (you may want to chop them up a bit if they are large pieces) in to the egg/cheese mixture.
  • Once mixed evenly, pour into a greased baking dish.
  • Put the in the oven for approximately 40 minutes or until the top is golden brown and the eggs are cooked through.
  • Remove from oven, let cool for about 5 minutes and enjoy!
